If you are like me, there have been so many moments in the last year when you just needed something to ward off the emotional munchies or for an extra burst of energy. That’s where a good fat bomb can come in handy, especially if you have them premade and they are anxiously awaiting you in the freezer or fridge to be called up for duty. I put together a list of 12 AIP fat bombs recipes to build up your armory, call it a little self care arsenal.
Many fat bombs are filled with non-AIP compliant ingredients like nuts, chocolate, etc. so it takes a bit of weeding to discover one that works.
The basic foundation for an AIP-compliant fat bomb is coconut manna or butter, so having a stockpile is imperative. It is not the same thing as coconut cream, I talk more about that in my Festive Orange Pumpkin Cranberry Protein Breakfast Cookies. If you want to make your own, Chocolate Covered Katie has got a how-to for you. I buy mine at the co-op from Let’s Do Organic.
You then add ingredients like coconut oil, shredded coconut and a burst of flavor from fruit or spice to balance out the creaminess of the coconut. Some include a sweetener or protein powder but that of course is optional. If they use Stevia, sub in coconut sugar, use whole fruit or leave out all together. If you are on an AIP diet and coconut is not your friend, some folks have success with ghee instead or Real World AIP has a few recipes below.
You may have seen contradictory information out there about the use of vanilla on the Autoimmune Protocol (I know I have) but I am going to rely on The Paleo Mom to be the most up-to-date and researched, you can read more in Spices On The Autoimmune Protocol. As long as you use an extract that is certified gluten-free, you should be good.
If taking these AIP fat bombs hiking or backpacking, your very own weather and temperatures will dictate how you bring them along. Colder weather means you can just toss them in a snack bag. But warmer weather could mean melting, so you may find it more convenient to put your fat bomb mix in a tube with a lid (instead of molds) so you can just squeeze it out on the trail!

Easy Ginger Vanilla AIP Fat Bombs

Ingredients
- 1/3 cup coconut manna or butter
- 1/3 cup coconut oil
- 1/4 cup unsweetened shredded coconut
- 2 Tablespoons collagen powder
- 1 teaspoon powdered ginger
- 1/2 teaspoon coconut sugar optional
- 1/2 teaspoon vanilla
Instructions
- Soften the coconut manna if needed in a warm water bath. Add all ingredients into a food processor and blend well.
- Scoop into silicone molds or an ice cube tray.
- Place in the freezer or refrigerator until solid. Store in an airtight container, remove from the freezer and let thaw a few minutes before eating.
