I’ll just put it out there now, this was my favorite meal this summer.
I. COULD. HAVE. EATEN. IT. EVERY. DAY.
And that says a lot. I like variety and tend to take one of each meal on a trip because I know I get tired of the same old thing. But the first time I tried this paleo instant mashed potatoes meal on the trail I immediately regretted not having packed more.
And it is SO easy. You don’t even have to have a dehydrator to make this meal!
All you have to do is put a serving of gari (read this post for more information about this amazing grain-like food) together with the above ingredients in your preferred ratio and you have a paleo instant mashed potatoes meal you can add cold or warm water to and enjoy! No meat for you? Skip the bacon and add dried broccoli, nuts, or your favorite protein substitute. I think I threw spinach in the one in this picture.
Just cover the dry mix generously with warm to hot water (boiling water will make it more pasty) and stir. Make sure to bring the mix up from the bottom to moisten all of it.
That’s it! This paleo instant mashed potatoes meal is so comforting and “stick to your ribs” that it is sure to satisfy those trail hunger pains. And because it is full of fiber (unlike instant white potatoes) it will keep you satisfied for a hours!
Buying in bulk tip: in addition to the large bag of gari, get that big bag of bacon pieces and jar of freeze dried chives at Costco, and a bag of nutritional yeast at Trader Joe’s (you can get it in the bulk section of Winco, as well). Should make you enough meals for the whole summer!

You Won’t Believe It’s Not Loaded Instant Mashed Potatoes Meal
Prep Time

Soak Time
5-10 minutes
Servings 1
Ingredients
- 1/2 cup gari
- bacon
- nutritional yeast
- dried chives
- garlic powder
- sea salt
Instructions
- Add the gari to your baggie or food sealer bag, sprinkle the rest of the ingredients on top and seal.
- On trail, add cold (more rice like texture) or warm water (more mashed potato like) and stir until all the ingredients are moistened and then add just a little bit more water. Let sit for a minute or two and then eat!
