This was a little variation of my Sweet Potato Staples recipe that I took on my backdoor hike to Snow Lake via the Middle Fork Snoqualmie River I did in November.
This year I have started taking warm food in addition to warm beverages because nothing tastes better when you have to stop moving to eat. You need all the help to stay warm that you can!

I simply boiled up some diced sweet potatoes and added coconut cream, bacon and smoked sea salt.
Do I even need to tell you it was amazing?!?
This version is designed for those cold hiking day trips but if you want to take something similar on the trail, follow my Sweet Potato Mash recipe but add the smoked sea salt to the potatoes along with the coconut milk and dehydrate as in the directions.
I add some Paleo Hot Cocoa and I’m toasty in no time.
Smoky Bacon Sweet Potatoes

Ingredients
- 2 cups diced sweet potatoes
- 1/4 cup full fat coconut cream or milk
- 2 pieces diced cooked bacon
- 1 teaspoon smoked sea salt or to taste
Instructions
- Peel and cut the sweet potatoes into small chunks. Boil them until tender. You can microwave if in a hurry.
- Mix with the rest of the ingredients in a bowl and then add to your thermos. That’s it!
