You know when your retired friends or family tell you that they are more busy now than when they were working? I’m into my second week of my break from work and I don’t think I have slowed down one bit! The plus side, however, is that I have had 4 hikes in the last week, like to Squire Creek, Goat Peak, Johnson Ridge with Sunrise and Scorpion Mountain, and Mt. Aix and that is more like me so I’m not complaining one bit.
I am, also, reminded that I do my best thinking while out wondering in the woods and I really have missed that. Lately, I have been thinking about what it means to be badass. Particularly, because that seems to be what gets attention on (social) media these days. And how one can find themselves doing way too much comparison because that would leave one to think that being badass means being like those people we see on media.
But then I remind myself that we all have gifts and one person’s badass might be different than another person’s brave and bold. One person’s brave and bold might be another person’s that-is-just-plain-stupid. And you could be living just your ordinary life and someone thinks you are the bravest person they know.
Like I talk about in my Definition of Courage, if all we accomplish here on Earth is to help give someone else courage when they need it by sharing our own special gifts, then there really isn’t much more than we can ask of this life.

So, I’m going to do my best and not compare myself to what other people are doing out there in the world and focus more on what are my gifts and how can I share them with those around me who might need them. And I wholeheartedly encourage you to do the same.

This recipe is a variation on my Chocolate Paleo Granola and I have to say it gives chocolate a run for its money. I know, basphemy! But seriously, this is so good I have a hard time saving it for my backpacking trips and finding myself craving it as a snack on busy days.
I know I always say this is my new favorite recipe when I post a new one but truly I am SO happy with how this turned out. I had been meaning to find a flavor combination that was different from my other breakfast for the trail and this one not only tastes distinctly new, it puts an island smile on my face just eating it!
Just like my other granola recipe, you can swap out the honey for maple syrup for vegan but it make take a few more minutes to bake. Watch the edges carefully as they brown.

You can, also, pick some up at your local store, just check to make sure it doesn’t have any added sugar. Trader Joe’s is one option or you can order an organic version online at Thrive Market.
Add the dehydrated pineapple to the granola once cooled and store in an air tight container. Serve with coconut milk for optimal flavor or your favorite milk alternative or eat straight up as a delicious tropical inspired snack! Put The Lime In The Coconut Pineapple Granola (Grain Free)
A grain free recipe from Must Hike Must Eat

Servings: 17 1/2 cup servings
Ingredients
- 1 tablespoon flax meal
- 2 1/2 tablespoons water
- 1 cup walnuts
- 1 cup pecans
- 1 cup pumpkin seeds
- 1 cup shredded coconut
- 1/2 cup honey maple syrup for vegan
- 1 teaspoon vanilla
- 3 limes zested
- 3 tablespoons coconut oil
- 1/2 teaspoon sea salt
- 1 cup dried pineapple
Instructions
- Prepare your flax egg by adding 1 tablespoon of flax meal with 2 1/2 tablespoons of water and set aside.
- In a food processor, grind the nuts and seeds into small pieces like pebbles. A few larger chunks is okay.
- Mix together in a large bowl with the coconut.
In a small bowl, mix the rest of the ingredients with the flax “egg”. Add to the nut mixture and mix well. - Spread out onto a baking sheet lined with parchment paper or a silpat sheet and bake at 320 degrees for 20 minutes until the edges begin to brown, stirring once at ten minutes.
- Remove from the oven and let cool for ten minutes.
- Take a spatula and turn the granola up from the bottom to break it into chunks.
- When cool, add the dehydrated pineapple and store in an air tight container.
- For the trail, divide into individual bags and add one tablespoon of coconut milk powder. On trail, add a few tablespoons of water to enjoy as cereal.
