Last month I posted my recipe for Arroz Con Leche (Rice Pudding) and mentioned that it was going to be included in a camping recipe cookbook on the website for Go Outdoors, a large outdoor retailer in the UK.
Well, they are launching that cookbook on July 11th and you can go check it out for your very own! The recipes are great for camping and eating in the outdoors with a few backpacking ones (like my Arroz Con Leche and Grain Free Pumpkin Spice Granola) thrown in. They look SO yummy!
As I have been enjoying this basic recipe out on the trail (as are some of the folks who join me), I have even been playing around with flavor combinations for a bit of variation. I have an overabundance of raspberries in my backyard this year.
That’s what I get for letting them have more real estate.
I enjoy making Raspberry Chia Jam in addition to freezing and dehydrating the berries to add to meals like my Sweet Potato Mash and trail mix. They have a wonderful tanginess!
I have learned you have to check berries while dehydrating, sometimes they don’t shrivel when dry so you think they need more time. Don’t be afraid to smoosh test them for doneness.
One thing I did this last backpacking trip on the Oregon section of the Pacific Crest Trail was take my Arroz Con Leche recipe but leave out the raisins and spices and add dried raspberries and ginger to the rice and coconut milk. I also swapped cashews for the almonds.
Oh my, it is SOOOO delicious.
And an added bonus, it turns your cereal pink. Who couldn’t use a little extra pink in the morning?
Not sure what I will call it yet or if I will post it as an actual recipe but it is divine. Just sayin’.
