When I first starting packing my lunches for backpacking, my standard was pepperoni or salami with hard cheese* and a cracker of some kind. However, trying to avoid nightshades has seriously reduced the ability to just pick up some pepperoni slices or salami log without some kind of pepper in it. I started looking for prepared meats that didn’t have additional ingredients and found prosciutto. It is normally just ham and salt. Simple. Like these wraps.

I carried this for lunch on my backpacking trip in the Eagle Cap Wilderness and I can’t tell you how delicious it was. Sweet, salty and savory, these are worth battling the bugs to sit long enough to put together.
I globbed the ingredients on the prosciutto and rolled it up. I often carry ingredients separately because I am never certain what will be appetizing on the trail.
Or how clean my hands will be. Looks like I did okay on this trip…
Trader Joe’s has a pretty good brand of prosciutto but Costco also has a great deal if you want to make more than 1-2 servings at a time. I am still looking for a pastured pork prosciutto, if you happen to know of a local one, let me know!
These are great for backpacking trips, day hikes, or lunch at work.
You can be as fancy as you like and don’t be afraid to experiment with different fruit. I think I will try pineapple, too. I use the Deglet Noor dates because they come pitted, but you could use Medjool if you wanted to. Read more about that on The Perfect Date.

I don’t always use goat cheese, pecans are tasty as well. These would be perfect appetizers for a party.
I’m usually good with four as a lunch, they are pretty filling.
*You might wonder about cheese on my paleo diet. No, it’s not paleo. I do my best to avoid it, especially cheese from CAFO cows. However, over the years as my will power to avoid that legal form of crack has been tested, I have noticed that some forms do not effect me the same as others (congestion, upset stomach, headache). Occasionally eating goat, sheep and raw aged cheeses and yogurt seems to be okay for me.

Prosciutto Date Wraps

Servings: 8 wraps
Ingredients
- 4 ounces prosciutto
- 1 ounce goat cheese
- 8-10 dates
- 8-10 dehydrated strawberries slices
- 8-10 pecans
Instructions
- Take one slice of prosciutto and fold it in half lengthwise.
- On one end, place a date, strawberry, a dab of goat cheese and/or a pecan.
- Roll these up into the prosciutto.
- Skewer with a toothpick or place in a snack sized plastic bag to store.
