I’m getting ready for the upcoming holiday weekend (turkey, anyone?) and I thought I would share some of the food I will be packing for the road as we once again drive over to the Washington Coast for a bit of car camping and beach walking.
Now, almost any of the recipes in my Paleo Recipe Index would work on the road just as well as the mountains. But if you are traveling by car like we are, it affords things like a cooler and a bit more options. I do make some banana or pumpkin bread ahead of time and slice it up, as well as snacks like hard boiled eggs since there isn’t a need to dehydrate and worry so much about weight.
We will be camping and I think I will talk my hubby into roasting vegetables in the campfire like we did last year so I can make he scrumptious dinner I put together rather spontaneously. Here’s what I did:
- At home I packed chopped cooked turkey, diced root vegetables like sweet potatoes, carrots and parsnips along with several garlic cloves and my Rosemary Cranberry Pecans.
- At camp, we got some coals going in the fire ring and wrapped the vegetables in foil with a little oil, setting them in the coals.
- When the vegetables are almost soft (a few hours), I added the turkey and pecans to the foil and let them heat up while the vegetables cooked the rest of the way.
- The spice from the pecans made everything taste like Thanksgiving all in one cup!
For dessert, I plan to make one of the recipes I shared in the Washington Trails Association online magazine this month, Festive Apple Compote. For that you need:
- 1 cup dehydrated apples slices
- ¼ cup dried cranberries (yes, more cranberries)
- ¼ cup chopped walnuts
- 1 Tb chopped candied ginger
- 1 tsp brown sugar
- ½ tsp cinnamon
- Pat of butter or coconut oil (optional)
Mix all the ingredients together in a bag for the trail. At camp, heat ½ cup of water and pour over mixture to rehydrate, let soak 5 minutes stirring occasionally. Add butter or coconut oil. Makes two servings.
As for what else I will eat during the weekend, I went through my previous posts on Thanksgiving and spiffed them up a bit you with tips and ideas for how to eat paleo on the road and one or two recipes you could bring to the family dinner table if you plan to stay home because it is pretty much the same thing I plan to do this year. If I do make anything new, I’ll share it in my Friday Faves right after Thanksgiving!
