Having now been sharing recipes here on Must Hike Must Eat for 2 1/2 years, it is time for a post of 10 of my favorite paleo and nightshade free backpacking meals. You are sure to find one that will be your next favorite meal, too.
You may have noticed a trend in my recipes lately and it will most likely continue into the summer. There haven’t been a lot of new dehydrated meals or dinners for backpacking and there are two BIG reasons for that. I was so good at my meal planning this past winter in combination with having my summer cut short last year due to an injury that my freezer is filled with at least 50 meals! So, I have been focusing on other foods like breakfast and snacks in preparation.
I thought I would put together a list of my 10 favorite paleo and nightshade free backpacking meals that are in my freezer and recipes here on the blog so that you will have some ideas for YOUR upcoming summer adventures if you still aren’t sure what to prepare. All of these meals are nightshade, gluten, soy and dairy free, in addition to being whole foods (6 are even vegan).
Some of my early recipes used rice and/or rice noodles but I have moved from those to one of my trail meal base grain-free swaps so feel free to make your own trades with any of these.
Whether you are hoping to eliminate certain foods from your diet or simply add in more vegetables, I guarantee you will find something here in this list that you will enjoy eating on your next outdoor exploration. And don’t worry, just because my 10 favorite paleo and nightshade free backpacking meals are set for the summer doesn’t mean I’m not experimenting and there will be more dishes to come in the fall!
Almond Ginger Chicken Satay
One of the first paleo recipes I adapted for the trail! If you love the this dish at home, you are going to love this version for the trail, especially with the added vegetables.
Bacon Sweet Potato Hash
Sweet potatoes are a nutritional power house and can be enjoyed for breakfast or dinner. If bacon is not your thing, nuts work well too! Feel free to add the same favorite toppings you enjoy on oatmeal or porridge.
Cashew Curry with Broccoli Rice
A hearty vegan friendly option that is packed with vegetables.
Creamy Lemon Ginger Sweet Potato Soup
My surprising nightshade free alternative to tomato soup. I added some dehydrated spinach to this one for some extra nutrition!
Nightshade Free Sweet Potato Chili
Paleo and nightshade free chili is possible! This dish uses some of our favorite flavors, garlic and cumin, together with a smoky component to bring chili on the trail without those pesky tomatoes and peppers.
Sneaky Turkey Stroganoff
Who couldn’t use more vegetables “hiding” in their meals? Not only does the sauce use cauliflower, you can add dehydrated shredded carrots and other vegetables to this comfort food dinner.
(You Won’t Believe It’s Not) Loaded Instant Mashed Potatoes Meal
One of my favorites on the trail, this hearty recipe uses an African staple as its base and some of your favorite baked potato toppings for a comfort food you will love to eat at the end of a hike.
Paleo Pesto Pizza
This nightshade free paleo pesto pizza meal for your next outdoor hike or backpacking trip that is easy to assemble and you can add your favorite toppings! You can opt for all store bought ingredients or throw in some vegetables you dehydrated yourself.
Paleo Pad Thai
These Pad Thai snack balls are the start of a tangy meal that you can add an assortment of vegetables to reminiscent of this popular noodle dish.
Paleo Deconstructed Sushi Roll
