Back in 2020 I posted a recipe Egg Fried Cauliflower Rice, Glass Butte And The Painted Hills of Oregon where I talk about how to substitute a gelatin egg if you are not eating eggs. I though I would show you the steps I took in making the gelatin egg and how easy it is to do on trail as a way to add protein if eggs are not your thing or you are following an Autoimmune Protocol diet. The process is similar to when you use gelatin in any recipe and need to have it “bloom”. My Love Yourself With Collagen Valentine Gummies are an example of this.
Here I am demonstrating in the silicone cup that came with my Sno Peak titanium stove. I only ever boil water in the stove so the bowl is handy for adding water to meals. It looks like they don’t make the exact bowl but a different version now.
Step One- Warm Your Water
For one egg, warm 3 tablespoons of water. Not too hot!
Step Two-Sprinkle the Gelatin
Sprinkle 1 tablespoon of gelatin on top of the warm gelatin. I use this one. Make sure not to use “hydrolysate” gelatin. It was been altered to not gel.
Step Three- Let It Bloom or Rest
Let the gelatin “bloom” or rest for about 2 minutes until you don’t see any powder.
Step Four-Scramble
With a spoon, gently break up and mix the gelatin until it looks like scrambled eggs.
Step Five-Add To Your Meals
I will add salt and a tiny bit of turmeric for color. You can also add nutritional yeast or sulphur black salt which gives it an egg flavor. My hubby does this when making scramble tofu eggs!
If you don’t want to eat the egg as is, it can be added to recipes that call for egg. You will need to experiment a little at first because it isn’t an exact match when baking (it won’t rise as much but the flavor is awesome). And stick to recipes that call for less than 4 eggs.
