Okay, so this might be stretching it on the hiking or backpacking food, but these are definitely one of my favorite treats and it’s my blog so I’m going to share. Besides, collagen is good for the joints and what hiker doesn’t need to take care of those?
I’ve been making gummies for some time now as a way to supplement collagen into my diet and after trying several recipes it boils down to just two ingredients, gelatin and juice. Simple but so many possibilities.
In honor of Valentines’s Day, I made them with tart cherry juice from Costco but you can use whatever juice you would like (except fresh pineapple and guava because they don’t set). One year, I even used wine as gifts for my friends!

My basic ratio looks like:
- 3 cups juice
- 5 tablespoons collagen (like THIS). Make sure you get the kind that gels.
First, add two cups of the juice to a small sauce pan and heat on medium. While that is warming up, add the collagen to the other cup of juice, stir and let sit for 5 minutes to bloom. When the juice in the saucepan is hot (doesn’t have to boil), stir in the collagen-juice mixture until dissolved. That’s it!
Now, you can add it to a plastic lined 8×8 glass dish or pour into molds like I did to make hearts…
Let cool and enjoy, they will go quick. The molds take 10-20 minutes to set and the 8×8 dish will take a few hours in the fridge. So, surprise your loved ones with this healthy treat this year (if you don’t eat them all by yourself).
Have fun with this recipe. Try vegetable juices, grate in ginger to the gelatin, or add some blueberries. These will pack for the trail, just know that heat will make them melt.

Ingredients
- 3 cups tart cherry juice
- 5 tablespoons gelatin
Instructions
- Heat two cups of juice in a small saucepan on medium heat.
- Add the gelatin to the remaining cup of juice and let set for five minutes.
- When the juice in the sauce pan is heated (not boiling), mix in the collagen mixture until dissolved.
- Pour the mixture into molds or a plastic lined 8×8 glass pan and let set in the fridge (twenty minutes for small molds, four hours for large pan).
