Earlier this summer a coworker messaged our gang with an ask about kiwis that his wife’s work (the YMCA) had received:

Now in my mind, I was thinking those 3lb clam shell containers of kiwis you can find at Costco so I said we would take two.

Oh no, not even.
The pick up spot was only about a mile away from my house so I rolled down on my bike and one pannier thinking no problem. When I got there, Raylin was laughing that yes, I had ridden my bike after he told his wife I ride everywhere and would probably show up on my bike.
The back of their car was full with ACTUAL CASES of kiwi they were delivering to as many people they knew as they could. As in, about 50 kiwi per box. All at ripe or just about to go overripe stage.
Not one to turn down a challenge, I luckily had straps in my pannier.

Yes, I made it home and assessed the golden kiwi bounty. What to do? I had been thinking we would have some for the kids to enjoy for the holiday weekend, not something I was going to have to process!

Turns out, I was able to fill 9 trays of the dehydrator with one box.

They dried up nicely!

Thankfully kiwi is easy to peel with the scoop of a spoon. Some people just eat the peel but I personally don’t enjoy it.
Some I peeled, halved and froze for smoothies.

With a little help from the hubs and family, we finished the rest.

We have about half of the dehydrated kiwi left, it was super popular with the kids this summer. We will be enjoying this over abundance into the winter season for sure!

Have you ever had an overabundance of fruit you had to do something with quick? What did you do?
