Seaweed is supposed to be good for you, I’m told. Omegas and micronutrients are the word. In an effort to eat more vegetables on trail, I came up with a way to sneak in some sea veggies. Now, plain seaweed simply is not appetizing after a long day’s hike. I was determined so I found this little trick and now I make this on a regular basis for both on and off trail snacking. It’s also cheaper and healthier than the little snack packs where the oil is usually soy.

I pick my nori up at the Asian market closest to me, usually in the 50 piece packs but you can buy any nori/seaweed you feel comfortable using. Most packages say “roasted” and it might not have the word “nori” written, just look for the square green sheets.
You will need:
- Roasted Seaweed Sheets
- Oil (I normally use avocado but you can use light olive)
- Sea salt
Lay 2 sheets down on a baking tray with the rough side up. Drizzle oil on top, then use a basting brush to spread it on evenly. Don’t worry if you don’t cover the whole sheet. Salt lightly (or heavily if you are into that kind of thing) and bake in a 250 degree oven for 6-7 minutes. The sheets brown easily, you want to them pull out before they start to do so.
When cool, cut each sheet into quarters and they fit nicely into a sandwich bag. They will be a bit greasy and you may find yourself licking your fingers while eating them. But they are SO much healthier than the orange stuff you lick off your fingers after eating Cheetos, right? Okay, some of you might not think they taste better than Cheetos but at least you won’t stain your clothes.
PSA: This healthy treat may require a mirror check or dental floss afterwards, unlike Cheetos. 🙂
Twice Baked Nori
Enjoy some sea vegetables on your next outdoor adventure!

Ingredients
- 2 sheets roasted nori
- 2 tablespoons avocado oil
- sea salt
Instructions
- Preheat the oven to 250 degrees.
- Lay two nori sheets out on a baking sheet rough side up.
- With a basting brush, cover with avocado oil.
- Sprinkle lightly with sea salt.
- Bake the nori for 6-7 minutes or until it begins to brown on the edges. You want to pull it out of the oven as soon as this happens.
- Let cool and cut into squares. Store in an airtight container.
