One of the things I miss most about being paleo is popcorn. It was my go to snack; bowls and bowls of air popped popcorn. Now, it’s not to say that I don’t occasionally treat myself to a batch of popcorn with melted ghee or coconut oil but popcorn is one thing I have traded for some other tasty snacks that don’t make me feel sluggish.
One of the first recipe books I picked up five years ago was Well Fed: Paleo Recipes for People Who Love To Eat by Melissa Joulwan. What I loved about each recipe was that she gave you a “base” and then ideas for how to make it your own. This was one of my favorite popcorn alternatives and it is SO easy to make! Spiced Coconut Chips are perfect for Whole 30 or any low carb meal plan.

Three ingredients, that’s it! I used Five spice for its Asian influence but you could use any of your favorite spices. Not sure what Five Spice is? It’s easy to make and typically is a blend of cinnamon, cloves, fennel, anise and peppercorn.
Start by mixing your spice and sea salt together in a small dish and have it ready next to the stove.
Next, heat up your skillet over medium heat.
Toss two cups of coconut chips into the skillet and stir constantly for two minutes. This goes quickly!
You will want to pull it off the heat when most of the pieces are golden brown, remembering that they will keep cooking until removed from the pan.
Now, toss the golden coconut with your spice mix.
It’s that easy! I love eating Spiced Coconut Chips on the trail when I don’t feel like something sweet and fat is a great endurance energy source.
Divide this up into individual snack bags or glass containers. Don’t be afraid to experiment with different spices you like or even straight up cinnamon. Adding this to your favorite trail mix is an option, too!
This Spiced Coconut Chips recipe makes about two cups and is rather satiating, so I put about 1/2 cup in each one.

Ingredients
- 2 cups coconut chips
- 1/2 teaspoon 5 spice
- 1/2 teaspoon salt
Instructions
- Mix the spice and salt together in a small dish and set aside.
- Heat a non-stick or cast iron skillet on medium heat.
- Toss in the coconut chips and stir quickly until mostly golden brown.
- Remove from heat and toss with the spice mix.
- Store in an airtight container.
