This year was the largest crop of plums I have ever had since planting a plum tree in the backyard. Well, I should say I started with 3 trees which went down to one and it took FOREVER to actually get any fruit to grow.

Now, with multiple bags in the freezer ready for cobblers and such, I tried out a version of my chia jam with some of the plums and lime. I never would have thought about lime but my bf says he has done it with his plum jam with great success.
This recipe, like my raspberry chia jam, is super simple and uses a lot less sugar than most recipes.
You are going to cook down the plums until they make a sauce. You don’t have to add any water, just give it time to simmer on a medium low heat.
Add your chia seeds, lime zest and juice, and maple syrup and let simmer for 5 more minutes.
I liked this jam because the lime gives it a tanginess that is a great contrast for sweet or creamy things. Perfect for toast and to have with crackers and nut butter on the trail, you can also enjoy it over coconut milk ice cream.

Plum Lime Chia Jam

Servings: 2 cups
Ingredients
- 4 cups cut plums
- 1 lime (juice and zest)
- 8 tablespoons chia seeds
- 5 tablespoons maple syrup
Instructions
- Cut and pit four cups of plums. Add to a sauce pan and simmer on medium low until the plums are broken down into a sauce (20-25 minutes). Note that I didn’t peel them, that is up to you.
- Juice and zest one lime. Add with the chia seeds and syrup to the plums and simmer for five more minutes.
- Store in a glass container in the fridge. The jam will continue to gel while cooling.
