Just a little update here on Day 8 and it looks like I am not completely inept at fermentation.
You may be wondering why I was so worried, apart from not having tried this before. I have to admit I am not very good at growing things in general (aside from mold) and my mother comes over and rescues most of my outdoor attempts at gardening.
Loving people give me live gifts all the time and it is rare they make it long under my “care”.
It’s a wonder my cat is still alive.
Anyway, I have done my best to keep my kombucha at the correct temperature in it’s own heated room and checked on it this evening to see how it was doing.
I smelled it first and it seemed to smell like I hoped it would.
I could see there was a thin layer of growth on top. I think that is my “baby” SCOBY making it’s way in the world. I didn’t detect any mold or such.
Now for the taste test. I opened a brand new box of straws and syringed up a few droppers of liquid in to a glass.
Hmmm….it still tastes like the sweet tea with a hint of the tang I need. Looks like it gets to sit a bit longer. Which is good because I wasn’t hopeful I would get this far so now I need to go and buy more organic black tea at the co-op. Yeah!
P.S. My boyfriend says I should name my baby. This could be fun, especially if I manage to have more than one. He says Margaret, Susan and Rosie are all good names. I was thinking more a long the lines of Scooby SCOBY or Scobylicious. Hmmm….
